Could these be the best brownies ever?

It’s fair to say I love chocolate and I love raspberries and in my humble opinion I just don’t believe you get a better flavour combination than this. Whether it’s brownies or icecream or a chocolate I love this combo of flavours. I’ve tried many chocolate raspberry brownie recipes but on Friday we had a playdate and I tried this amazing recipe from Mrs Hollingsworth and it has another pretty awesome flavour combination in it that really works. The secret ingredient is peanut butter. We love peanut butter in our household and it’s very rare we don’t have a few varieties on the go at once. So when I came across this recipe I knew it I had to try it immediately. The only problem was we were out of peanut butter so I actually had to substitute and didn’t get to make this recipe to its truest form. I actually substituted a chocolate nut butter instead (I purchase mine from Naked foods) which I thought worked really well. Here is the recipe and try as you like with peanut butter or with a choc nut butter or for that matter any nut butter you prefer.

Ingredients

  • 1 cup cacao powder

  • 1/2 cup coconut oil

  • 1 cup medjool dates

  • 1/2 cup maple syrup

  • 2 eggs (the recipe actually asked for flax eggs but we used organic eggs instead)

  • 1/2 cup ground almonds

  • 1/2 cup your favourite nut butter, plus 1/4 more to swirl

  • 1/2 cup raspberries

  • Pinch of Himalayan salt

  • 1/4 cup water

  • 1/2 tsp bicarbonate of soda

Preheat fan forced oven to 150 degrees, then pop all the ingredients except the extra nut butter and raspberries into a food processor (I used my vitamix and it worked fine) and blend for a couple of minutes until a smooth and sticky batter forms. Spoon the batter into a lined baking tin, then swirl the extra nut butter on top and scatter on the raspberries, pressing them down into the batter.

Place in the oven and bake for 30 minutes, then leave for another half an hour to cool (as the brownies will continue to cook after they are taken out the oven).

So simple and so delish. The brownies are super moist and my very picky husband devoured these.
